Ingredients:

2 slices bacon - finely chopped
-
2 cloves garlic - finely chopped
-
1/4 cup onion - finely chopped
-
1 can (28 oz) Diced Tomatoes with Basil, Garlic & Oregano, drained

1/4 teaspoon ground black pepper
-
1 pound large (21/30 count) raw shell on with tail shrimp, thawed if frozen
-
1/4 cup crumbled feta cheese
-
1/2 teaspoon dried dill weed

Directions:

Cook bacon, garlic and onion in large skillet over medium-high heat 3 minutes or until lightly browned, stirring frequently. Add drained tomatoes and pepper. Cook over
low heat 3 minutes, stirring occasionally.​
​
Peel, de-vein and remove tail from shrimp; add to skillet. Cook over medium heat 5 minutes or just until shrimp turn pink, stirring frequently. Remove from heat. Sprinkle with cheese and dill.

Cucumber-Radish Salad

​Ingredients:

2 8 ounces skinless, boneless chicken breast halves - halved horizontally
-
Kosher salt and black pepper
-
2 tablespoons extra-virgin olive oil
-
½ cup crème fraîche
-
¼ cup chopped fresh basil leaves
-
1 tablespoon Dijon-style mustard
-
2 tablespoons lemon juice
-
1 seedless cucumber, thinly sliced (2 cups)
-
8 radishes, very thinly sliced (1 1/4 cups)
-
2 ounces radish or broccoli sprouts, washed

Directions:
​
Place each chicken piece between 2 pieces of plastic wrap; lightly pound to an even thickness. Season on both sides with kosher salt and black pepper.

In a large heavy skillet heat 1 tablespoon of the oil over medium-high heat. Add chicken; cook 3 minutes or until browned. Turn; cook 2 to 3 minutes more or until done (165°F).
​
​Meanwhile, for Basil Sauce, in a bowl stir together crème fraîche, basil, and mustard. For Cucumber-Radish Salad, in a medium bowl whisk together lemon juice, remaining 1 tablespoon oil, and a pinch of kosher salt. Add cucumber, radishes, and sprouts; toss to coat. Serve chicken with Basil Sauce and Cucumber-Radish Salad.
